ALL INspired by La Scala Salad The La Scala Chopp ALL INspired by La Scala Salad

The La Scala Chopped Salad has been all the rage; so we were inspired to create our ALL IN take on it! 

Dressing:
-1/2 cup olive oil
-3 tbsp red wine vinegar
-2 tbsp dijon
-1 tbsp honey
-Salt & pepper to taste
-1/4 cup grated Parmesan 

Salad Ingredients
-Shredded iceberg
-1 15oz can of garbanzo beans, drained
-4oz of salami, thinly sliced 
-6oz artichokes, chopped
-1/4 sun dried tomatoes, chopped
-1 cup shredded mozzarella 

Whisk dressing ingredients together. In a bowl, toss salad ingredients with the dressing. That’s it! So simple, but so, so yummy!

“I have struggled with my weight most of my adult life. I often relied on fast food and was also reaching for sugary snacks to keep my energy up. I was approaching 40 and wanted to work on seeing changes. Joining ALL IN was the best choice I made. I had a great support system and learned that nutrition is just as important as exercise. The first month was an adjustment but then I got into a great routine. I had a wonderful coach, @katie.is.all.in. She was always there for me and was very supportive. Dragon Fruit Frozen Smoothie Dragonfruit for des Dragon Fruit Frozen Smoothie 

Dragonfruit for dessert? Yes, please! With its gorgeous color, this refreshing dish is sure to delight. 

So grab your spoons, cause this “smoothie” isn’t one that’s made for straws. 

-1.5oz frozen dragonfruit
-5.2oz Greek yogurt 
-1/2tsp vanilla extract
-1tbsp honey
-unsweetened shredded coconut
-frozen blueberries 

Add dragonfruit, yogurt, vanilla extract, and honey to a blender. Blend until smooth. Transfer to a bowl and place in freezer for at least 30 minutes. Scoop into a serving cup. Top with frozen blueberries and coconut. Enjoy!

ALL IN the Street Corn Salad Who doesn’t love s ALL IN the Street Corn Salad

Who doesn’t love street corn? So we thought: why not make it into a salad?! Skip the mayo for some Greek yogurt, throw in some chicken breast and you’ve got a protein-packed plate that’s just as delish as the snack it was inspired by! 

For the dressing: 
-5.3oz plain nonfat Greek yogurt
-2 Tbsp Sriracha
-Juice of 1/2 Lime
-Salt & pepper to taste 

Salad:
-10oz Romaine, chopped
-1 Bag Frozen Corn (12oz)
-2 Chicken breast, chopped (we bought precooked)
-1/2 Red Onion, chopped
-5oz Grape Tomatoes, cut in half
-1 jalapeño, deseeded and chopped
-1 bush of cilantro, rough chopped
-2 cloves of garlic, minced
-2 Tbsp cotija cheese (or grated Parmesan) 
-Salt & pepper to taste 

Whisk dressing ingredients together. 

Roast corn in a pan with a little avocado oil. Throw all the salad ingredients together. Toss with dressing. Enjoy!

Baked Black Bean Tacos You better believe we’re Baked Black Bean Tacos

You better believe we’re gonna taco ‘bout it!

These black bean tacos are the perfect balance of healthy and hearty! 

-2 15oz cans of black beans, drained & rinsed 
-1/2 white onion, chopped
-2 cloves garlic, minced
-2 chipotle in adobo peppers, chopped
-1/2 cup chicken stock
-corn tortillas (we used @tastemirancho)

Sauté onions and garlic until onion is translucent. Add in beans, peppers and stock (use just enough stock that they’re not too dry, but not too wet). Mash. 

Microwave corn tortillas until malleable. On a large sheet pan: spray with avocado oil, lay tortillas across, and scoop bean mixture on each. Fold tortillas into tacos. 

Bake at 400 degrees until crispy. 

Top with whatever you desire- avocado, jalapeños, cilantro, or a fresh salsa!

I don’t like to talk about this kind of stuff that much…commentary on weight (gain or loss) is such a sensitive and triggering subject for me(and for many)…but…Bobby and I have worked pretty hard to get back to a place where we both feel healthier and more comfortable in our own skin. We are by no means perfect and every day is a challenge to make the right choices and to do the work to stay consistent and accountable but I’m proud of our accomplishments over the past year. The left pic is from Sacramento in Feb 2022, and the right is from 2 days ago. What a difference a year makes! And I’m so thankful for Bobby and his willingness to try an accountability program that I learned about from The Real Housewives franchise 😬 if that’s not love, I don’t know what is ❤️ and thank you @tory2381 @katie.is.all.in @xo.dowhatyoulove for being the best coaches!!

Zesty Baked Garbanzos 2 cans garbanzo beans I sa Zesty Baked Garbanzos 

2 cans garbanzo beans
I sautéed shallot 
2 tbsp capers 
2 tbsp green olives, chopped 
1 tbsp red chili flakes 
1/3 cup olive oil 
1 tbsp paprika 
1 tbsp black pepper
I lemon, thinly sliced rounds 

Preheat oven to 375. Sauté shallots. Transfer to baking dish and add garbanzos, capers, olives, red pepper flakes, olive oil, lemon slices, paprika, and pepper. Mix together. 

Cover and bake for 35-40 minutes. 

Enjoy alone or over some rice and salad.

Frozen Yogurt Bark 

Move over ice cream— there’s a new sweet treat taking over and bringing lots of delicious, nutritious value to your freezer! 

Ingredients:
-2 5.3oz containers of nonfat Green yogurt
-1 tbsp honey
-1 tsp vanilla extract
-fresh berries 
-dark chocolate 
-granola (or nuts)

Mix yogurt, honey and vanilla in a bowl. Spread onto a parchment-lined baking sheet. Top with fresh berries, dark chocolate and granola. Freeze for at least a few hours (or overnight). Break apart and enjoy!

Crunchy Brussels Sprouts Salad Lettuce gets all t Crunchy Brussels Sprouts Salad

Lettuce gets all the love, but there’s so much more you can do with a salad! Shaved Brussels, radicchio, and a tangy dressing make this a standout for lunch or dinner.

Ingredients
-1lb Brussels sprouts, shaved 
-1 small head of radicchio, chopped
-2 sweet potatoes, peeled and diced
-3 green onions, chopped 
-1/2 cup pistachios, chopped
-fresh Parmesan 
-olive oil
-salt & pepper 

Dressing
-1/4 cup apple cider vinegar 
-1/3 cup olive oil
-3 garlic cloves, minced
-1 tbsp honey
-2 tbsp dijon mustard 
-2 tsps each salt, pepper, paprika 

Toss diced sweet potatoes with olive oil, salt and pepper. Roast at 400 degrees for 25-30 minutes. 

In a bowl whisk together dressing ingredients. Add salad ingredients on top, shaving fresh Parmesan over all. Toss. 

You’ll never look at romaine the same again!
