Italian Bean Salad This colorful Italian Bean Sa Italian Bean Salad 

This colorful Italian Bean Salad is a flavor explosion! Packed with protein and fresh veggies, it’s a nutritious and delicious meal prep option that will keep you energized, and out of the kitchen, all week long. 

You’ll need:
- 1 can of garbanzo beans, drained
- 1 can of white beans, drained
- 2 bell peppers, chopped 
- 1/2 cup red onion, chopped
- 1/2 cup banana peppers, chopped 
- 1/2 cup roasted red peppers, chopped
- 1 cup Italian parsley, chopped
- 1 cup salami, sliced
- 1/3 cup red wine vinegar
- 1/3 cup olive oil 
- 1 tbsp whole grain mustard 
- 1 tsp salt & pepper

Mix everything together and lunch is ready for the next four days!

This red, white, and blue beauty is podium worthy:

🍉 Juicy watermelon: The star athlete, bringing the sweetness and hydration. 
🫐 Blueberries: Bursting with antioxidants, they’re the endurance champs. 
🧀 Feta cheese: A creamy, salty powerhouse for that medal-worthy finish.

Sprinkle in some mint and green onion for a refreshing zing, then drizzle with a lime-olive oil dressing and a touch of balsamic glaze for a gold-medal-worthy flavor. A sprinkle of chopped walnuts adds a satisfying crunch, good fats, and extra protein.

Perfect for your next backyard BBQ, potluck, or simply to fuel your day like a champion. 🥇

You’ll need:
* 1 personal watermelon, cubed

Cleaner Chicken Milanese A crispy, flavorful twi Cleaner Chicken Milanese 

A crispy, flavorful twist on a classic! Embrace the crunchy goodness of almond flour and panko, air-fried to perfection. Topped with a vibrant arugula salad – it’s an easy weeknight dinner that’s as delicious as it is nutritious.

You’ll need: 

- 2 chicken breasts 
- Almond flour
- Panko 
- 2 eggs 
- Arugula 
- Cherry tomatoes 
- Parmesan cheese 
- Capers 
- Olive oil 
- Lemon juice 
- Salt & pepper 

Pound your chicken breasts until thin. Salt and pepper to your desired level. Dip breast in this order: almond flour, eggs, panko. 

Air fry at 375 degrees for 20 minutes. 

Prepare your arugula salad by mixing arugula, cherry tomatoes, cheese, and capers. Toss with olive oil and fresh lemon juice.
